Little Pig in the Rice

Ingredients:
1 C Brown rice
1 lb Pork sausage
1/4-1/2 cup Chopped onion
15-oz can black beans, rinsed & drained
1 cup Shredded Monterey Jack cheese
1 tsp Salt
1 - 14.5 oz Can diced, undrained tomatoes
1 - 14.5-oz can whole kernel com w/red & green bell peppers, drained
Directions
Directions: Rinse 1 cup rice & place in casserole dish with 2 C water. Cover & bake at 350° for 1 hour OR cook in IP. (If using white rice in IP, use 1 cup rice, 1 1/4 cup water - 1 TBS, 1/4 tsp salt and cook high pressure 6 min with NR 10 min. If cooking pot-in-pot, cook 7 min with 10 min NR.) (If using brown rice in IP, USE POT-in-pot method using 1 cup rice, 1 cup water, 1/4 tsp salt and cook HP 23 min with 10 min NR.)
While rice is cooking, brown sausage in a large nonstick skillet over med-high heat until no pink remains, stiring frequently to break up sausage. Remove sausage from skillet & cover to keep warm. Drain excess fat from skillet. In same skillet, cook onion for two min. Add beans, undrained tomatoes, corn, sausage, cooked rice and salt. Heat through. Sprinkle cheese on top and serve.
