Ham and Bean Soup

1/2 cup onion, (diced)
1 cup carrot, (peeled and diced)
1/2 cup celery, (diced)
2 garlic cloves, (minced)
1 1/2 tablespoons all-purpose flour
4 cups low-sodium chicken broth
3 (15 ounce) canned white beans, (drained and rinsed)
2 cups cooked ham, (cubed or shredded)
1 bay leaf
1 teaspoon dried thyme
1/2 teaspoon black pepper
salt to taste, (if needed)
fresh thyme (for garnish)
Directions
Saute
In a large pot, heat 2 tablespoons butter over medium heat. Add the 1/2 cup onion, 1 cup carrot, and 1/2 cup celery, and cook until tender. Add 2 garlic cloves, and cook for 30 seconds.
Sprinkle 1 1/2 tablespoons all-purpose flour over the cooked veggies and stir to combine.
Pour
Add in 4 cups low-sodium chicken broth, 3 (15 ounce) canned white beans,, 2 cups cooked ham, 1 bay leaf, 1 teaspoon dried thyme, and 1/2 teaspoon black pepper. Stir to combine.
Simmer
Bring to a low boil, then reduce the heat to a simmer. Simmer for 15 to 20 minutes, stirring occasionally.
Season
Remove the bay leaf then taste and season with salt to taste, if needed.
Garnish with fresh thyme and enjoy!
