One Pan, Queso Chicken and Rice

Recipe:
1 tbsp olive oil
1/2 diced onion
1 lb boneless skinless chicken breast, cut into bite-sized pieces
sprinkle of each- smoked paprika, cumin, onion powder, garlic powder
1 packet taco seasoning
1 cup uncooked white rice
2 cups chicken broth
1 cup water
1/2 cup salsa
1/2 cup jarred queso (or more to taste)
Optional: cilantro, green onions, jalapeños for topping
Directions
Heat oil in a large skillet over medium-high. Add onion. Next, add chicken and sprinkle with seasonings. Cook until slightly browned and almost cooked through. Add rice, broth, water, salsa, and taco seasoning. Stir, bring to a boil, then reduce heat and cover. Simmer for 15–18 minutes or until rice is tender. Stir in queso until melted and creamy.
Top with your favorite garnishes and enjoy!
