Lemon Chicken Orzo Soup with Grilled Baby Gem Lettuce, Scall

This is the third different flavour profile soup that I made with my homemade chicken stock this week. Lots of squeezed lemon and fresh pepper, thinly sliced scallion, tender chicken and grilled lettuce - which turns bitter lettuce sweet and is so amazingly underrated in soup. Parmesan to top it off....my brain was thinking Caesar-esque soup and it was such a joy to slurp up. No real recipe just infuse your stock with lemon juice to taste and add all of the fixings listed above ♥️

Rough recipe for 2:

1 litre chicken stock

1 large chicken breast

Juice of 1/2 lemon

85 grams cooked orzo

2 scallions sliced

1 baby gem lettuce, olive oil

Parmesan and black pepper for garnish

Directions

Heat your chicken stock and add the breast poaching for 10-15 minutes on a medium summer until done - take out to cool and pull. Add the lemon juice and some black pepper (salt to taste). In the meantime cut the lettuce head in half brush the other leaves with olive oil and place on a griddle with a weight until soft and charred yet al dente (3-4 min per side) . Plate the orzo lettuce pulled chicken and scallion, top with hot broth and garnish with black pepper and Parmesan. You might want to add more lemon and salt depending.
