8 ounces cream or Half and Half (cream better but…)
8 ounces mushrooms (sliced)
6 green onions sliced in 1-inch strips (green only with only partial white ends)
5 cloves garlic (chopped)
6 T Olive Oil
2 Roma Tomatoes (chopped, minimize liquid)
1 small can adobo chili peppers (large can for sno-cone spicy and grab the Kleenex); if you double the recipe one small can and one large is fine.
1 pound chopped cooked chicken breast (or more)
1/2 t Salt and pepper to taste
1 lb penne pasta
Crumbled Tortilla chips
Parmesan cheese
**don’t forget the garlic bread**
Directions
Heat oil in large pan on medium heat and add garlic and mushrooms. Cook until soft (about 5-7 minutes). Add green onions, tomatoes and chicken and continue cooking until heated through. Add can of chili peppers (chopped with sauce included). Heat a bit longer.
Lower heat and add cream. Simmer for 10+ minutes while stirring (do not cover).
Make sure the pasta is cooked and ready to go. Add pasta to pan or pour sauce on pasta in its pan.
Notes
Use LARGE pan and toss pasta into sauce. If the recipe is doubled, then pour the sauce into the double pasta.
Make sure all water is drained from the pasta
