Chocolate Cake with a Secret Ingredient

Ingredients

1 cup Guinness beer

½ cup oil

¾ cup cocoa powder

1 ¾ cup sugar

2 eggs

2 tsp vanilla extract

¾ cup light sour cream or yogurt

2 cups all purpose flour

2 ½ tsp baking soda

¼ tsp salt

Icing:

4 oz softened light cream cheese

¾ cup icing sugar

½ tsp vanilla

Directions

In a large bowl add beer, oil and cocoa and whisk together.

Add sugar and eggs and blend together.

Add vanilla, sour cream or yogurt and blend well.

Add flour, baking soda and salt mix just until flour is well mixed.

Pour into bundt pan sprayed with oil and bake at 350 F for about 35 minutes or until a tester comes out clean. Do not overbake.

In a small food processor or with a whisk blend softened cream cheese, then add icing sugar and vanilla and blend until smooth.

Spread over top of cooled cake.

Optional: dust with cocoa powder before serving. Enjoy!
