Devil’s Chicken

1 large chicken breast, pounded flat
2 Tbsps butter
1 Tbsp Dijon mustard
1/3 cup Panko breadcrumbs
2 Tbsp grated pecorino cheese
Spice blend:
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ground yellow mustard
1/2 tsp smoked paprika
1/2 tsp sweet paprika
Directions
1. Preheat oven to 450 degrees.
2. Line sheet pan with aluminum foil and spray with non-stick spray.
3. Melt butter and mix with mustard and spice blend.
4. Coat chicken with mixture. Then coat chicken with breadcrumbs and cheese.
5. Bake for 20-22 minutes, until chicken is golden brown.
Notes
Sweet potato slices can be baked at same temperature and length of time.
