Hamburger-Barley Soup

Ingredients

1/2 teaspoon vegetable oil

**ADD**

1/2pound lean ground beef

1/4 cup yellow onion, chopped

1/2 cup celery, chopped

1/2 cup carrots, chopped

**ADD**

1 (15 ounce) can diced tomatoes

1 (15 oz can of water

1/4 cup pearl barley, thoroughly washed

4 beef bouillon

1/4 teaspoon basil

1/4 teaspoon dried thyme

Salt and fresh ground black pepper to taste

**LATER**

1/2 tablespoon brown sugar

1 teaspoon vinegar

Directions

1. In a large 3 quart pot over medium heat, let the oil get warmed.

2. Add the meat, onion, celery, and carrot; stir/saute for 5 minutes, breaking up the meat with a spoon--cook until meat is no longer pink.

3. Add in the remaining ingredients; except brown sugar and vinegar bring to a boil.

4. Lower heat to medium-low and cook, covered, for about 1 hour or until vegetables and barley are tender.

5. When done add brown sugar and vinegar
