Fried Zucchini

Ingredients

1 3/4 cups Freshly grated parmesan cheese

1 1/2 cups Panko bread crumbs

3/4 teaspoons Salt

2 large Eggs

2 medium Zucchini, cut into 3" long by ½ " wide wedges

Pan or deep fry at 350 degrees

Directions

1. Stir 1 ½ Cups Parmesan cheese, Panko, and salt in a medium bowl to blend. Whisk eggs in another medium bowl to blend.

2. Working in batches, dip the zucchini in the egg to completely coat and allow the excess to drip back into the egg bowl. Coat the zucchini in the panko mixture patting to adhere and coat completely. Place the coated zucchini on a baking sheet.

3. When the oil is hot, fry the wedges until golden brow about 3 minutes.

4. Remove from oil with a slotted spoon and place on paper towels to drain.

5. Arrange wedges on a platter and sprinkle with remaining Parmesan cheese and serve.
