Low Carb Tuscan Chicken

Directions

Start with seasoning 2 halved chicken breasts with lemon pepper.

Cook on medium high heat in olive oil until cooked through, usually 3-4 minutes for each side depending on the thickness, and then remove.

Add butter and saute chopped red onion and minced garlic.

Add a cup of chicken broth and 1 ½ cup of heavy whipping cream and simmer for 1 minute.

Add 1 cup of grated parmesan cheese and stir until melted.

Next add all the seasoning and your sundried tomatoes.

Then add a couple cups of baby spinach and stir until slight wilted.

Add your chicken back in and you are ready to go.

¾ cup sundried tomatoes

2 cups baby spinach

Seasoning

1 tsp dried rosemary

1 tsp dried thyme

1 tsp dried oregano

1 tsp dried basil

½ tsp dried marjoram

½ tsp garlic powder

½ tsp onion powder

½ tsp dried sage

½ tsp black pepper

½ tsp crushed red pepper flakes (optional)
