Parmesan Garlic Pork Tenderloin Sheet Pan Dinner

2 lb pork tenderloin (Garlic & Herb)
1 onion (chopped)
1 bag baby potatoes (quartered)
1/2 bag baby carrots (sliced in half)
1-2 tbsp olive oil
1/2 tsp each salt and pepper
1 tsp each smoked paprika, Italian seasoning, garlic powder
12 oz broccoli florets (chopped into bite-sized pieces)
3 tbsp butter
2 tbsp minced garlic
1 tbsp parsley
1/2 cup freshly shredded Parmesan cheese
Directions
Preheat your oven to 400 degrees F.
Slice baby potatoes in quarters, slice baby carrots in half, and chop an onion.
Add the vegetables to a sheet pan with 1 tbsp olive oil and season with salt, pepper, smoked paprika, Italian seasoning, and garlic powder. Stir veggies until well coated in oil and seasonings.
Move the veggies from the center of the sheet pan and add the Garlic and Herb pork tenderloin directly to the pan. Add a little drizzle of olive oil to the top of the pork to help with browning.
Bake at 400 degrees F for 45-50 minutes. If adding broccoli, take the sheet pan out of the oven about half way through cooking and stir broccoli into the veggies.
After adding the broccoli, bake the sheet pan meal for the remainder of the 45-50 minutes or until the pork reaches a temperature of at least 145 degrees F with an internal meat thermometer.
Melt butter and stir in minced garlic and parsley. Take the sheet pan out of the oven, brush it with the garlic butter and add about half of the Parmesan cheese. Place the sheet pan dinner back in the oven for just a couple of minutes.
Serve sheet pan meal with remaining Parmesan cheese. Allow pork to rest for a couple of minutes. Slice the tenderloin with a knife into thin pieces and serve alongside the vegetables.Enjoy!
