Healthy Banana Brownies

3 ripe bananas (mashed)
1/4 cup almond butter or peanut butter
1/4 cup melted coconut oil
3 tbsp maple syrup
1 tsp vanilla extract
2 eggs (room temperature)
1/2 cup unsweetened cocoa powder
1/2 cup unsweetened collagen powder (optional, I recommend Promix!)
1 tbsp cornstarch
1/2 tsp baking soda
Pinch of salt
1/2 cup mini semi-sweet chocolate chips
Optional: flaky sea salt, for topping
Directions
Preheat oven to 350F. Lightly grease an 8x8 baking dish with coconut oil
Add the bananas to a mixing bowl and mash very well so there are no chunks
Add almond butter (or peanut butter), melted coconut oil, maple syrup and vanilla extract. Stir until well combined.
Crack the room temperature eggs in a separate bowl and whisk. Make sure that they are room temperature or they will make the coconut oil solidify. To do this quickly, set eggs in a bowl of warm water for 5 minutes.
Stir the eggs into the batter until well combined
Add cocoa powder, collagen powder (if using), cornstarch, baking soda and salt to the bowl. Stir well.
Fold in chocolate chips.
Pour into the prepared pan and bake for 22–25 minutes. The edges should be set but the center will feel slightly soft.
Let cool, then slice and enjoy!
