Mediterranean Beef & Salad Bowl

Ingredients

Marrinade

60ml cup light olive oil

1/4 cup red wine vinegar

1 lemons, juiced

3 cloves garlic, crushed

1/2 teaspoon dried rosemary

1/2 teaspoon dried sage

1/2 teaspoon dried thyme

1/2 teaspoon dried marjoram

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

crushed black pepper to taste

1 bag mixed salad leaves

kalamata olives

1 cucumber

1 cup Couscous

1 bag parsley

600g rump

1 tub creamy pesto dressing

1 tub Balsamic Vinaigrette Dressing

1 tomato

Directions

Combine olive oil, vinegar, lemon juice, garlic, rosemary, sage, thyme, marjoram, basil, oregano, garlic powder, and pepper in a large, shallow dish. Mix with a fork until mixture looks uniform.

Cut up rump and marinate for 2-4 hours.

Slice cucumber and chop tomato. Grab a bowl. Add salad leaves, olives, cucumber and tomato. Dress, toss and season.

Heat olive oil in a frying pan over medium-high heat. Cook beef, tossing, until browned, 2-3 mins.

Cook couscous according to packet. Plate up beef, couscous and salad. Dollop with pesto dressing.
