Broccoli Cheese Casserole

2c cooked rice (follow directions on box, except use chicken broth instead of water)
1 sm. chopped onion
1 can cream of mushroom soup
1 sm jar of cheese whiz (or 1/2 block Velveeta)
ritz crackers crushed (1 sleeve)
2 boxes of frozen chopped broccoli (cook for 5mins over a rolling boil then drain
Directions
Saute onion in butter until clear, add cheese whiz and soup stir together in warm pan. In a oven proof baking dish combine all ingredients except cracker crumbs, salt and pepper to taste. Add crumbs to top. Bake on 350 for 25-30 mins
