Ultimate Twice-Baked Potatoes

Ingredients

4 large baking potatoes

8 slices bacon

1 cup sour cream

1 cup shredded Cheddar cheese, divided

8 green onions, sliced, divided

½ cup milk

4 tablespoons butter

½ teaspoon salt

½ teaspoon pepper

Directions

Gather the ingredients. Preheat the oven to 350 degrees F (175 degrees C).

Bake potatoes in the preheated oven until tender, about 1 hour. Set potatoes aside until cool enough to handle.

Meanwhile, cook bacon in a large, deep skillet over medium-high heat until evenly brown. Drain, crumble, and set aside.

Slice potatoes in half lengthwise; scoop flesh into a large bowl. Reserve skins.

Add sour cream, ½ cup cheese, ½ green onions, milk, butter, salt, and black pepper to potato flesh; mix with a hand mixer until well blended and creamy.

Spoon potato mixture into reserved potato skins; top with remaining ½ cup cheese, remaining ½ green onions, and bacon.

Bake in the preheated until cheese is melted, about 15 minutes. Serve Hot!
