Dan Dan Noodles

Ingredients

* 2 tbsp neutral oil

* 2 scallions(sliced; white for cooking and green for garnish)

* 1/2 lbs ground pork or beef

* 2 tsp minced ginger

* 1/4 cup yacai or preserved mustard greens (or chopped kimchi)

* 2 tbsp shoaxing wine (or dry sherry)

* 1 tsp light soy sauce

* 1/2 tsp dark soy sauce

* 1 tsp sugar(optional)

* 2 bundles fresh wheat noodles

* Choy sum

* Crushed peanuts

Sauce

* 3 tsp sesame paste (or chunky peanut butter)

* 2 tbsp light soy sauce

* 1/2 tsp dark soy sauce

* 1 tbsp Chinese black vinegar (or balsamic vinegar and water)

* 1 tsp sesame oil

* 5 tbsp Sichuan chili oil

* 1 tsp sugar

* 2 cloves garlic(grated)

Directions

1. In a pan, heat oil on medium heat and cook mince until the water has evaporated and the fat starts to render and sizzle(6-8 minutes).

2. Add ginger, white portion of scallions, and yacai. Sauté for a couple of minutes until fragrant.

3. Add shoaxing wine and once alcohol has evaporated, season with light and dark soy sauce and sugar. Set aside on low heat to keep warm.

4. Combine all sauce ingredients.

5. Boil noodles according to package instructions and cook choy sum in the last 45 seconds of boiling.

6. Combine the noodles with the sauce and don’t be afraid to add a little bit of the water if the sauce is too thick. Plate with the choy sum, cooked mince, green portion of scallions, crushed peanuts, and more chili oil.
