Mortadella Melt

Ingredients

2 slices sour dough, bakery or store bought

1 tbsp unsalted butter

4 slices mortadella

2 slices provolone cheese

½ onion caramelized (see separate recipe) or paper thin sliced

Mustard

Mayonnaise

Directions

1. Bring pan to medium heat, add butter until melted. Add sourdough to pan and wipe one side the bread slices in butter. Toast the buttered side golden brown, about 1-2 minutes. Set aside. Spread mayo on one slice and mustard to the other slice, spreads go on untoasted side (inside of sandwich).

2. Bring pan (same or separate) to medium heat. Add mortadella slice by slice into the shape of the sandwich. Cook until slightly brown or when fat renders. About a few minutes.

3. Flip mortadella, lower heat, add caramelized onion then top with cheese. Once cheese is melted about 1-2 minutes, remove from pan, add to bread, then assemble sandwich.

Notes

Caramelized onion is superior, but it takes at least 45 to make so if using raw onion use less since it won’t shrink as much as caramelized onion.

Bakery bread is worth it! Freeze the leftovers.
