Tres Leches Cake

One of my favorite summer time desserts! Make this ahead of time and serve with those delicious summer fruits!

1/2 cup soft unsalted butter

4 eggs

1/4 cup greek yogurt

1 cup granulated sugar

1 tsp vanilla extract

1 1/2 cups all purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1 1/2 cup whole milk

12oz evaporated milk

1 can sweetened condensed milk

Directions

Start by preheating your oven to 350F

In a large bowl separate your egg yolks from your egg whites. Add your egg whites to a large bowl along with 1/2 of your granulated sugar. Whip on high speed until soft peaks start to form. Transfer egg whites to a separate bowl.

In the same large bowl add your butter and the other 1/2 of your sugar. Mix on medium speed for 2 minutes. Add your egg yolks in one at a time mixing in between each egg yolk. Once all your egg yolks are incorporated add your vanilla and greek yogurt. Add back in your egg whites and fold until smooth.

Once all your wet ingredients are incorporated add your dry ingredients and fold until all dry bits are smooth. Add your batter to a buttered 9x13 baking dish. Bake on 350F for 33-35 minutes or until a toothpick comes out clean.

While your cake is baking mix your milk, evaporated milk and sweetened condensed milk in a bowl. Once your cake is cooked poke holes in it using a fork. Soak your cake in your milk mixture. Top with whip cream and enjoy!

I let my cake sit overnight before topping with whip cream but you can enjoy immediately.*
