Spring Onion Crackers

10g chopped Spring onion

100g starter... Farida Mutik replace 100g starter with 50g milk and 50g low protein flour, additionally add 1g instant yeast

this is an autolyse method :

100g starter (autolyse To begin your starter, mix 50g flour with 50g tepid water in a jar or, better still, a plastic container. Make sure all the flour is incorporated and leave, semi-uncovered, at room temperature for 24 hrs.

70g low protein flour

10g milk powder

20g melted butter

1/4 tsp salt

15g milk

Method

➡️ mix everything into a dough form

➡️ rest dough until it feels a little puffy

➡️ roll out the dough to desired thickness (prefer 2-3mm)

➡️ use your favorite cookie cutter to cut out

➡️ bake at 160C for 30mins or until it is crunchy (depending on crackers size and thickness)

*for mini hearts I baked at 160C 15-20mins
