Creamy Ground Beef Noodle Skillet

1 lb ground beef
8 oz egg noodles
1 small onion, chopped
3 cloves garlic, minced
2 tbsp butter
1 tbsp olive oil
1 cup beef broth
1 cup heavy cream
1 can (10.5 oz) cream of mushroom soup
1 tsp Italian seasoning
½ tsp paprika
½ tsp salt (or to taste)
½ tsp black pepper
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
1 tbsp fresh parsley, chopped (optional)
Directions
Bring a pot of salted water to a boil and cook the egg noodles according to package instructions, about 7 to 9 minutes. Drain and set aside.
Heat olive oil in a large skillet over medium heat for about 2 minutes.
Add the ground beef and cook for 6 to 8 minutes until browned, breaking it up as it cooks. Drain excess grease if needed.
Add the chopped onion and cook for 2 to 3 minutes until softened.
Stir in the garlic and cook for about 1 minute until fragrant.
Add the butter and let it melt into the mixture.
Pour in the beef broth and let it simmer for 2 minutes, scraping up any bits from the pan.
Stir in the heavy cream and cream of mushroom soup until smooth.
Add Italian seasoning, paprika, salt, and pepper. Let it simmer for 3 to 4 minutes until slightly thickened.
Add the cooked noodles and toss to coat in the creamy sauce.
Stir in the cheddar and Parmesan cheese until melted and creamy.
Let everything cook together for another 2 minutes, then garnish with fresh parsley and serve warm.
