Crispy Zucchini Fries with Creamy BBQ Sauce

2 large eggs (beaten)
3 Tablespoons flour
½ cup bread crumbs
¼ teaspoon garlic powder
2 Tablespoons grated parmesan cheese
salt & pepper (to taste)
3 medium zucchini (cut into skinny sticks)
½ cup BBQ Sauce
½ cup mayonnaise
Directions
Preheat oven to 425℉ Spray a baking sheet with cooking spray. Set aside.
In a small bowl, beat egg with a fork until well combined.
In another bowl, add the flour.
In a third bowl, fill with bread crumbs. Toss the breadcrumbs with garlic powder and Parmesan cheese, and salt and pepper to taste. Then set aside.
Dip the zucchini sticks into the flour (shake off the extra flour) then dip it in the beaten egg, and then into the bread crumb mixture. Make sure all sides get coated well. Place the sticks on the prepared baking sheet.
Bake at 425℉ for about 20 minutes, or until golden brown and crispy.
To make the creamy BBQ Sauce, mix BBQ sauce and mayonnaise.
Notes
7/24/25 I only used 2 zucchini about 6-7” each in length. Used almond flour but once it got wet and stuck together it wouldn’t stick to the zucchini sticks so maybe try a different gf flour. I added 1/8 tsp pepper and 1 tsp salt to the gf bread crumbs, cheese and garlic powder. I only made 1/2 the dipping sauce. It did not make 6 servings-more like 4 servings. So if 6 servings are wanted, 1 1/2 times the ingredients and use 3 zucchini. Very good!
Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the Air Fryer or oven to make crispy.
When we make this recipe we tend to use all-purpose flour since that is normally what we have on hand. However, feel free to use what works for your family. Other options include the following: almond flour, oat flour, and gluten-free flour.
