Chocolate Mug Cake (with Applesauce)

Ingredients

For the custard:

1/4 tsp cocoa powder

1 tsp Splenda

Pinch of decaf coffee granules

3 tbsp boiled water

1/4 tsp vanilla

1/4 tsp xanthan gum

For the cake:

2 tbsp apple sauce, no lumps (12 kcal)

3 tbsp soy milk (15 kcal)

2 tbsp cocoa powder (48 kcal)

1 tsp decaf coffee granules

3 tbsp Splenda (18 kcal)

1/2 tsp vanilla extract

Pinch of salt

1/2 tsp baking powder

3 tbsp wholemeal stoneground flour (90 kcal)

Total kcal: 183 kcal

Directions

For the custard: In a small bowl, combine cocoa powder, coffee, Splenda, freshly boiled water and vanilla. Add the xanthan gum and immediately stir until thickened.

For the cake: Strain the applesauce of lumps and set aside. Boil the soy milk in the microwave then add the cocoa powder, Splenda and vanilla extract. Add the apple sauce, baking powder, salt and stir well. Finally add the flour and mix until just combined. Lightly spray mug and microwave for 90 seconds. Add custard half way and microwave.

Result: tried for the third time following recipe as written. Honestly this was totally disgusting. Rubber and unpleasant and somehow completely tasteless despite how much Splenda I added. It was like chewing a rubber tyre with slime on top (from the custard). I would rather have just eaten the apple sauce LOL. Apple sauce mug cake is definitely a fail.

Recipe: Syrup (new addition): 1 tsp Splenda, 1/4 tsp xanthan gum, 2 tbsp water, 1/4 tsp cocoa powder, 1/4 tsp vanilla. Made up a random smaller recipe but it came out like a weird rubber puck LOL. Stick to the recipe but just scale down if needed. Custard turned out awesome - tasted exactly like custard.

First try as written. Came out good! I used Splenda and added stevia on top to make it sweeter. Could do a simple syrup sauce. Also, my apple sauce has apple chunks so the cake had burning hot hunks throughout. Kinda didn’t taste sweet or gooey enough? Over baked?
