Italian Pasta Salad

Ingredients

2 cup uncooked spiral pasta, cooked

1/2 cup chopped red pepper

1/2 cup chopped green pepper

1 1/2 cup halved cherry tomatoes

1 cup sliced fresh mushrooms

3 Tablespoons thinly sliced green onions

1/2 teaspoon salt

1-2 cups cooked chicken, cubed

1 1/2 cup zesty Italian dressing

1/2+ cup cubed provolone or cheddar cheese, added to mayonnaise mixture

1+ can (2.25 oz) sliced olives, drained, added to mayonnaise mixture.

Dressing:

3/4 cup mayonnaise

1/2 cup grated Parmesan cheese

Directions

Cook pasta, drain, rinse with cold water and drain again.

In a bowl add all the ingredients through the zesty Italian salad dressing. Then cover and refrigerate for at least 4 hours or overnight. Then drain.

Combine the mayonnaise and Parmesan cheese. Stir in the cheese and olives. Gently fold into the pasta mixture.

Notes

I add cheese and olives to what looks good vs measuring exactly.
