Lemon Garlic Chicken with Tomato Bruschetta & Parmesan Aspar

Ingredients

4 grilled chicken breasts

lemon garlic marinade (or your favorite!)

asapragus with woody stems removed

4 roma tomatoes cored and diced

1/2 of a white onion diced

2 large cloves of minced garlic

10-15 basil leaves thinly sliced

1/4 c of parmesan cheese + more to sprinkle on asparagus

1 tbsp of olive oil + olive oil to drizzle over asparagus

garlic powder

salt & pepper

balsamic glaze

aluminum foil or grill pan

optional: lemon zest

Directions

Marinate chicken in lemon garlic mariande

Preheat grill to 500 degrees

Season aspragus with olive oil, garlic powder, salt & pepper and place on grill pan

Combine diced tomatoes, onions, garlic, basil, 1/4 c of shredded parm, 1 tbsp olive oil, salt & pepper and mix until combined

Serve bruschetta over grilled chicken with a drizzle over balsamic glaze

Serve asparagus with lemon zest and more shredded parm
