Garlic Butter Steak Bites & Creamy Chipotle White Cheddar Sh

Ingredients

12 oz shell pasta

1 lb sirloin or ribeye steak, cut into bite-sized pieces

Salt & pepper, to taste

1 tsp smoked paprika

1 tbsp olive oil

2 tbsp unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 ½ cups shredded white cheddar cheese

1–2 chipotle peppers in adobo, finely chopped (adjust for heat)

2 tbsp adobo sauce (from the chipotle can)

¼ cup pasta water (optional, for thinning)

Chopped parsley or chives, for garnish

Directions

Cook Pasta: Boil shell pasta in salted water according to package directions. Drain and set aside. Save ¼ cup pasta water.

Season Steak: Toss steak bites with salt, pepper, and smoked paprika.

Sear Steak: In a large skillet over medium-high heat, heat olive oil and sear steak bites for 2–3 minutes per side. Add butter and garlic during the last minute. Toss to coat. Remove steak and set aside.

Make Sauce: Lower heat to medium. In the same skillet, add heavy cream, chopped chipotle peppers, adobo sauce, and shredded white cheddar. Stir until smooth and creamy. Add a splash of pasta water if needed.

Combine: Add pasta to the sauce and toss to coat. Return steak bites to the skillet and gently stir.

Serve: Garnish with parsley or chives and extra white cheddar if desired.
