1 lb ground beef
12 oz penne or rotini pasta
1 cup beef broth
1 cup heavy cream
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1/2 cup cream cheese, softened
2 tbsp olive oil or butter
4 cloves garlic, minced
Salt and pepper to taste
Fresh parsley or chives (optional, for garnish)
Directions
In a large skillet, heat olive oil or butter over medium heat. Add ground beef and minced garlic, cooking until the beef is browned and cooked through, about 5-7 minutes. Season with salt and pepper.
Stir in beef broth, heavy cream, and ranch seasoning mix. Bring the mixture to a boil, then add uncooked pasta; reduce heat and simmer for 10-12 minutes, stirring occasionally, until the pasta is al dente.
Add cream cheese and shredded cheddar cheese, stirring until melted and the sauce is creamy.
Serve warm, garnished with fresh parsley or chives if desired.
