Spicy Coconut Curry Noodles with Crispy Ground Beef for Ep.

When I saw @Emily Roz post this, I knew I had to recreate it. And let me tell you, these were incredible. It tastes like something you’d pick up from your favorite Thai spot, but it comes together in about 30 minutes and is totally budget-friendly. Cozy, spicy, saucy... basically everything you want in a bowl of noodles.

Ingredients below — full recipe is in my bio!

For the Curry Broth:

1 tbsp oil

1-inch piece fresh ginger, finely minced or grated

3 garlic cloves, finely minced

2 green onions, diced, whites and greens separated

1 tbsp tomato paste

1–2 tsp red curry paste

1–2 tsp fish sauce

1 tsp ground cumin

½ tsp ground turmeric

½ tsp ground coriander

1 can coconut milk (~13.5oz)

1/4 – 1/2 cup chicken broth

Juice from ½ lime (or more to taste)

For the Noodles:

2 packets ramen noodles

For the Crispy Ground Beef:

1/2 lb ground beef

Salt and pepper, to taste

1/2 tsp ground cumin

1/2 tsp ground coriander

1/4 tsp ground turmeric

Splash of soy sauce

Splash of fish sauce

For the Bok Choy:

2 baby bok choy, trimmed and halved

Salt (for boiling water)

Optional Garnish:

Green onion tops, sliced

Chili oil (drizzle to taste)

Sesame seeds
