Egg Tortilla Pie
2 teaspoons olive oil
2 flour tortillas
2 eggs (at room temperature)
75g grated Cheddar cheese
hot sauce (to taste)
Preheat oven to 180°C. Grease an ovenproof dish with 1 tsp oil.
Line dish with a tortilla, forming a bowl shape.
Crack in eggs, sprinkle salt on yolks, and scatter over ⅓ of the grated cheese.
Oil one side of a second tortilla, place it oiled-side up on the filling, and press edges together. Brush edges with remaining oil.
Top with remaining cheese and hot sauce to taste. Bake for 15 minutes until eggs are cooked, cheese melted, and tortilla edges crisp. Adjust cooking time if needed. Serve immediately.
Add cooked leftover sausages to the filling of the pie.
