Sweet Pea Coulis

yield: about 3 cups

2 average size leeks, white and green parts

clairfied butter

2 10 oz bags organic green peas

¼ tsp garlic

2 cups chicken or veggie stock

leaves from 4-5 sprigs of mint

few pinches salt

pinch nutmeg

few pinches white pepper

1. Cook leeks and garlic covered over low heat until soft

2. Add peas, stock and mint leaves

It is not necessary to further cook this sauce, as it is kept warm

3. Puree and season to taste

4. Strain

5. Strain again thorugh an ultra-fine strain
