Here’s the quick recipe (serves 4):
1 ½ lbs chicken breast/thighs, sliced
1 ½ tsp salt, pepper, 1 tsp paprika, 1 tsp garlic powder
2 tsp arrowroot or cornstarch
2 Tbsp olive oil (divided) + 1 Tbsp melted butter
2 shallots, sliced
4 oz spinach
1 lemon sliced + 1 lemon halved
¼ c white wine
¼ c chicken stock
2 Tbsp capers
Parsley to finish
1️⃣ Toss chicken w/ spices + arrowroot + 1 Tbsp oil. Chill 1 hr–24 hrs.
Directions
Preheat oven 425°F. Arrange shallots, spinach, lemon slices on sheet pan, drizzle w/ butter + 1 Tbsp oil. Season.
Add chicken on top. Pour wine + stock, sprinkle capers.
Bake 18–20 min til cooked. Squeeze halved lemon + garnish parsley.
