Stuffed Chipotle Sweet Potatoes

Ingredients

-Large sweet potatoes (2)

-Shallot (1, minced)

-Garlic clove (1 small, minced)

-Canned corn kernels (1/2 cup)

-Cooked black beans (1 cup, drained & rinsed)

-Radishes (2, thinly sliced)

-Red cabbage (1/2 cup thinly sliced)

-Cotija or feta cheese (1/4 cup, crumbled)

-Avocado (1/2 small, diced)

-Cilantro (1/2 cup, chopped)

-Lime juice (1)

-EVOO

-Chipotle mayo

-Bacon

Directions

1) Coat potatoes in olive oil, loosely wrap in tinfoil, place on baking sheet and bake at 400 degrees for ~1 hour
