Ingredients

one fresh yuzu

1/4 shallot

white balsamic vinegar

Salt

Olive oil

Directions

slice shallot into thin rounds.

juice juzu and let shallot macerate in it for 15 min.

Add splash of white balsamic, add salt and olive oil to taste.

Zest yuzu on top, stir and toss with salad.

Notes

variations in citrus: kumquat, Meyer lemon, Makrut lime.
