Ciabatta Garlic Bread
1 loaf ciabatta bread (or 1 Sourdough boule)
1 stick butter, softened
1/2 tsp kosher salt (I use less or none because Parmesan is salty enough)
1/4 tsp black pepper
3 cloves garlic, minced (or more 😉)
1/2 cup grated Parmesan cheese
1 tbls fresh thyme (optional, I skip)
1/4 cup fresh parsley, chopped
Directions
Preheat an oven to 350F
For the filling, mix all the ingredients except ciabatta together and mash with a fork until combined.
Cut the ciabatta in slices without cutting through the bottom. Make a horizontal slash the length of the loaf once again without cutting through the bottom. If using sourdough boule, cut in medium squares in grid pattern.
Using a butter knife, stuff the ciabatta generously with the butter mixture.
Wrap in foil and bake for 15 minutes. Unwrap the ciabatta and bake 10 minutes more or until crunchy and golden.
