Chicken, Mushroom & Orzo Pasta Bake

Ingredients

16 oz. orzo (dry)

4 cups chicken broth

1 packet beefy onion soup mix

1lb cooked chicken

8oz Sliced baby portobello mushrooms

2 cups chopped spinach

8oz sour cream

1 can cream of mushroom

2 cup Shredded Parmesan cheese

Directions

  1. preheat oven to 425 degrees

  2. Grease a 9x13 baking dish

  3. Mix broth and soup packet together in measuring cup. Combine orzo, chicken broth, and onion soup packet in bottom of baking dish

  4. Add chicken, mushrooms, spinach, cream of mushroom and sour cream on top. Lightly mix, keeping orzo covered with liquid

  5. Bake for 30 minutes uncovered

  6. remove pan from oven and fully mix contents of pan. Mix half of the Parmesan cheese in with contents.

  7. Top with remaining Parmesan cheese and bake for an addition 20-25 minutes, or until cheese is light browned

  8. remove from oven and serve
