Im down 150lbs and it’s been all about not only eating more protein and fewer carbs, but food thats exciting and I look forward to eating. This a great way to get some more veggies in, keep carbs low, and instead of adding cheese to the sandwich, adding into inside the “bread” :)

You can fill these up however way you want!

Here is how I made it:

1.Grab 2 large zucchini. Shred them inside a large bowl over a towel, then squeeze out the excess water really well… like REALLY well. Until you are leftover with zucchini pulp in the bowl. Discard the water or use it to feed plants.

2.To the zucchini pulp, add two to three pinches salt, 1tsp garlic powder, and 1 cup shredded mozzarella cheese and mix really well.

3.Line a baking tray with parchment paper, spray a bit of avocado oil, then divide up the zucchini into 4 buns and press down to make it even height. You can always top this with a little more cheese on top if you’d like.

4.Pop the tray in the oven at 400F for 20-22 mins, until fully set. Remove and let cool for a couple minutes.

5.Fill these with whatever fillings you want. I spread the base with 2tbsp of my protein mayo (to make this I just mix 2 tbsp mayo with 4 tbsp yogurt, 1/2 tsp garlic powder, a couple pinches salt, with lots of fresh cracked pepper). Then add whatever toppings you like. For me it was tomato, lettuce, some red onion, and ham.

Put the top side on, cut in half, and ENJOY!
