30 Minute Chocolate Cake (Lucille Murrell Moore)

Ingredients

Cake:

2 cups plain flour

½ cup buttermilk

1 tsp soda

2 sticks oleo

2 cups sugar

2 eggs

1 tsp vanilla

3 tbsp cocoa (heaping)

Pinch salt

1 cup water

Icing:

1 stick butter or margarine

1 box 10X sugar

6 tbsp milk

1 tsp vanilla

3 tbsp (heaping) cocoa

1 to 2 cups chopped pecans

Directions

Mix sugar and flour in mixing bowl.

In saucepan combine oleo, water and cocoa.

Mix well and bring to boil.

Add sugar and flour mixture – beating.

Add eggs, buttermilk, soda, salt and vanilla.

Mix well and pour into greased pan 16x11x1 or 2”.

Bake 350º for 15 – 20 minutes.

Icing:

Combine oleo, milk, cocoa in saucepan.

Stirring – bring to boil.

Remove from heat.

Add sugar, beat well, then add salt, vanilla and pecans.

Spread over warm cake.
