One-pan Creamy Garlic Herb Chicken Penne with Mushrooms

1 lb boneless, skinless chicken breasts, diced
Salt, pepper, and Italian seasoning to taste
2 tablespoons olive oil
1 cup sliced mushrooms (white or cremini)
4 cloves garlic, minced
2 cups chicken broth
1 cup milk
2 cups penne pasta (uncooked)
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried basil
1/2 teaspoon onion powder
2 tablespoons chopped fresh parsley (for garnish)
Directions
Season diced chicken with salt, pepper, and Italian seasoning.
In a large skillet over medium heat, heat olive oil. Add chicken and cook until golden and cooked through, about 5–6 minutes. Remove and set aside.
In the same pan, add mushrooms and sauté for 3–4 minutes until browned and tender.
Add garlic and cook for 1 minute until fragrant.
Pour in chicken broth and milk. Stir in uncooked penne and bring to a gentle boil.
Reduce heat to low, cover, and simmer for 12–15 minutes until pasta is tender, stirring occasionally.
Stir in heavy cream, Parmesan cheese, dried basil, and onion powder. Return cooked chicken to the pan.
Simmer uncovered for 2–3 minutes until the sauce thickens and everything is well coated.
Garnish with chopped fresh parsley and serve warm.
