Soy-Glazed Boneless Chicken Thighs

Ingredients

  • 1/4 cup reduced-sodium soy sauce or gluten-free tamari

  • 2 1/2 tablespoons balsamic vinegar

  • 1 tablespoon honey

  • 3 garlic cloves, grated

  • 1 teaspoon Sriracha hot sauce

  • 1 teaspoon grated fresh ginger

  • 8 boneless, skinless chicken thighs (4 ounces each), fat trimmed

  • 1 scallion, green part only, sliced, for garnish

Directions

  1. In a small bowl, combine the soy sauce, vinegar, honey, garlic, Sriracha, and ginger and mix well

  2. Pour half of the marinade (1/4 cup) into a large bowl with the chicken and stir to coat the chicken well. Marinate in the refrigerator for at least 2 hours or up to overnight. (Reserve the remaining marinade for later.)

  3. Remove the chicken from the marinade (discard the marinade). Working in batches if needed, transfer the chicken to the air fryer basket in a single layer. Cook at 400°F until the chicken is cooked through in the center, about 14 minutes, flipping halfway through.

  4. Meanwhile, place the reserved 1/4 cup marinade in a small pot and cook over medium-low heat for 1 to 2 minutes to reduce slightly and thicken

  5. To serve, drizzle the sauce over the chicken and top with the scallion
