2–3 medium white onions, sliced into ¼-inch rings

8 oz freshly shredded Parmesan cheese

½ tbsp olive oil

Salt, to taste

Garlic powder, to taste

Paprika, to taste (optional)

Crushed red pepper flakes (optional)

Dried herbs like thyme or Italian seasoning (optional)

Fresh chopped parsley or extra Parmesan for garnish (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Sprinkle a generous, even layer of shredded Parmesan directly onto the parchment to form a chip base.

Step 3

Slice onions into ¼-inch rings and separate. Press gently into the cheese layer with space between rings.

Step 4

Brush onions lightly with olive oil to help them roast and hold seasoning.

Step 5

Sprinkle with salt, garlic powder, and paprika. Add herbs or chili flakes if desired.

Step 6

Bake for 20 minutes, or until cheese is golden and onions are starting to caramelize.

Step 7

Cool on tray for 10 minutes to crisp up fully.

Step 8

Break into chip-sized pieces and serve with garnish if desired.
