Zanes' Mango Pork With Plantains

Ingredients

2 cups plantains sliced into 1/8” thick medallions or use pre-cooked maduros

2 cups of cooked pork cubed

2 cups of cubed mangoes

Mango butter sauce. See Notes.

Directions

In a skillet add a couple tbsp oil. Unless using pre-cooked maduros, sauté the plantains until they begin to turn translucent and darken.

Add the Pork and Mangos and stir fry till hot.

Add the Mango butter Sauce, stir till hot, serve over (or fold in) cooked rice.

Notes

1/4 cup of heavy cream

1/2 tablespoon of butter

1/2 cup of mango

Drain the mangoes, add the cream and the butter and puree the mix.
