Air Fryer Falafel

Ingredients

1 can chickpeas, drained and rinsed

1/2 small yellow onion, roughly chopped

4 cloves garlic

1/4 cup parsley leaves, stems removed

1/4 cup dill, stems removed

2 tsp ground cumin

2 tsp ground coriander

1/2 tsp salt

1/8 tsp black pepper

1/2 Tbsp lemon juice

1/3 cup plain bread crumbs*

3 Tbsp chickpea flour*

Directions

Add chickpeas, onion, garlic, parsley, and dill to a food processor. Pulse a few times, until the mixture is well combined and broken up into large chunks.

Add the cumin, coriander, salt, black pepper, lemon juice, breadcrumbs, and chickpea flour to the food processor. Pulse once or twice more to combine. By now you mixture should resemble course sand.

Preheat your air fryer to 350F, allowing it to preheat while you work on step 4.

Using a spoon or a cookie scoop, form the mixture into balls (about 1.5 Tbsp each). Using your fingers, slightly flatten into thick discs. (You should get around 14-16 falafels).

Add your falafel discs to the preheated air fryer, making sure to not overcrowd them (they shouldn't be touching one another). You likely may need to do this in two separate batches.Air fry your first batch of falafels for 8 minutes. Using kitchen tongs (or another kitchen utensil), carefully flip them. Air fry for another 8-12 minutes, or until they reach your desired level of crispiness. Repeat this process with a second batch if needed.
