Grated Egg Avocado Toast (New Version)

Ingredients

2 slices sourdough bread (toasted)

2 hard-boiled eggs (grated, one per each piece of toast)

½ avocado (peel and pit)

⅓ cup 2% cottage cheese (Good Culture)

pinch red pepper flakes

few turns cracked black pepper

Directions

Blend the Mousse

Combine half of a medium sized avocado, and 1/3 cup of 2% Good Culture cottage cheese in a mini blender. Blend until smooth and creamy. Add to a piping bag and cut off the tip.

Toast the Bread

Toast one-two slices of your favorite bread.

Assemble

Pipe the mousse onto the toasted bread. Grab your grater and gently grate the hard-boiled egg over the top of the mousse. Season with a pinch of red pepper flakes and few turns of cracked black pepper. Enjoy!
