Costa Rican–Style Coconut Black Beans with Cheese

Ingredients

2 cups cooked black beans (with some liquid)

½ cup coconut milk

1 small onion, finely diced

1 garlic clove, minced

1 tsp ground cumin

½ tsp dried thyme or oregano

Salt & black pepper

¾ cup shredded queso fresco, mozzarella, or mild Oaxaca-style cheese

Cilantro or scallions for garnish

Directions

Sauté onion in oil until soft; add garlic and spices.

Add beans + a bit of their liquid and simmer 10 minutes.

Stir in coconut milk; simmer gently until creamy.

Sprinkle cheese over the top, cover, and let it melt.

Finish with herbs.
