One Pot Creamy Mushroom Pasta

Ingredients

1 shallot diced

4 cloves garlic, minced

1 tbsp olive oil

2 tbsp butter (more if needed)

1 to 2 cups mushrooms

1/4tsp salt

1/4tsp pepper

2 cups low sodium chicken broth

1 cup Cream

250g Choice Pasta

2-3 cups Spinach

1 cup Parmesan

Directions

Melt butter and olive oil together, throw in garlic and shallots

When aromatic, add slices mushrooms and cook until cooked down. Add more butter if needed

When mushrooms are cooked, season them with salt and pepper

Pour in broth and cream, stir to combine and bring to a boil

Add pasta in, cover, and let cook until all dente (around 10 mins)

Mix in spinach and parmesan
