KIELBASA POTATO SOUP

INGREDIENTS:
1/2 Ib kielbasa, sliced and cooked
4 tbsp butter
5 medium potatoes, peeled and diced
1/4 cup celery, chopped
1/2 cup carrots, sliced
1/4 cup onions, chopped
3 cloves garlic, minced
3 cups chicken broth
1/4 tsp dried thyme
1/2 cup cheddar cheese
1 can cream of chicken
1/2 cup heavy cream
2 tbsp potato starch diluted in 3 tbsp water for thicker consistency (optional)
Salt and pepper to taste
2 tbsp chopped parsley
Directions
DIRECTIONS. In a non-stick skillet, saute the sausage until browned. Set aside. In a large pot, melt the butter. Add in onions followed by celery and carrots. Cook for about 5-7 minutes. Then add in potatoes, broth and thyme. Stir and bring to a simmer on medium heat. Cook for 10-12 minutes or until potatoes are fork tender. Stir in the cream of chicken, sausage, heavy cream and cheese then thicken with the potato starch- water mixture (if using) for thicker consistency, Simmer for 3 minutes or until the cheese is melted and everything is heated through,
