Ingredients

8 oz. Potatoes, peeled and cubed

4 oz. Fresh spinach, cut up

2 Tbsp Canola oil

1/2 tsp Cumin seeds

1/2 tsp Mustard seeds

Pinch Hing

1/2 cup Onions, finely chopped

1 tsp Green Chillies

1 tsp Ginger, chopped

1/4 tsp Turmeric powder

1/2 tsp Cumin powder

1/2 tsp Coriander powder

Salt to taste

Pinch of sugar

1/4 tsp Mango powder

1/4 tsp Chat masala

Directions

Heat oil on medium heat, add cumin seeds, mustard seeds & Hing.

Add onions, ginger, green chilies and stir until little limp.

Add turmeric, cumin powder and coriander powder.

Add potatoes, stir, cover and cook until potatoes are 3/4 done. Keep stirring in between.

Add spinach and salt and a pinch of sugar. Cover and cook until done.

Sprinkle chat masala and mango powder & mix.
