Carrot Wrap Recipe

I’ve made several versions of this now and this one’s our favourite. It could not be easier, gluten free, healthy, high in protein and fibre it ticks all the boxes.

Carrot wrap - feeds 1 adult or 2 kids

2 carrots grated, 200g

2 large eggs

100g grated mix cheddar and mozzarella - @aldi_ireland

Salt & pepper to taste

Directions

Preheat the oven 180ºc fan.

Line a swiss roll tin with non-stick parchment paper, mine is 32 x 23 x 2.5cm. Lightly oil the paper if you wish.

Mix all the ingredients together in a bowl.

Pour onto the tray. Smooth and spread evenly with a rubber spatula.

Bake for 25 minutes approximately.

Cool for a few minutes, then peel off the paper.

Fill with your favourite sandwich filling, roll cut and enjoy.

It’s best eaten on the day of making.

Storage: Keep the unfilled wrap in the fridge for 1 day.

Not suitable for freezing.
