5 Minute Mediterranean Summer Spread

Ingredients

1 cup thick Greek yogurt

3-4 ounces feta from the brine

Zest and juice of 1 lemon

1 tablespoon honey (optional but recommend)

1 large pomegranate

3-4 tbsps crushed pistachios

2-3 tbsp finely chopped parsley and fresh mint

1 tsp sumac

Extra feta crumbles

drizzled of GOOD Olive oil

Optional: balsamic glaze

Here is how I made it:

1.Add your, feta, lemon zest, lemon juice, and honey (optional) to a small food processor and process till smooth. Taste and adjust as needed.

2.Spread the mixture onto a board or serving plate.

3.Seed the pomegranate and spread evenly over the top.

4.Sprinkle the pistachios, parsley, and mint across the top.

5.Finish with a dusting of sumac, some extra feta crumbles, a drizzles of olive oil.
