Josh curried sausages

1 brown onion
5 garlic cloves, minced
4 potatoes
(whatever vegetables otherwise)
2 cups chicken stock
400ml coconut milk
2 tbps soy sauce
neutral oil
Directions
1. Cut potatoes in half (equal sizes).
2. Add oil to pressure cooker, set to saute mode and saute sausages for about 8 minutes. After 8 minutes, optionally take sausages out.
3. Dice onions and mince garlic, adding both to cooker for around one minute.
4. Add curry powder (and a little oil if there isn't much in there from the sausages), chicken stock and soy sauce, and cook for minute or two til fragrent.
5. Add potatoes to the pot (and sausages if taken out earlier)
6. Put on high pressure cook for 10 minutes and then natural release for 10 minutes.
7. Turn on saute mode. Add remaining vegetables and coconut milk, turn on saute mode and stir for 2 minutes.
8. Serve!
