Potato and chive cakes

Ingredients

800g large potatoes, peeled and grated

4 eggs, lightly beaten

3 onions, sliced thinly

4 tbsp chives, chopped

Salt and black pepper

Olive oil

Directions

1 Mix the grated potato with the eggs, sliced onion and chives. Season to taste with salt and pepper.

2 Separate into four parts for large cakes, or eight smaller cakes.

3 Heat the olive oil in a frying pan over a medium-low heat and add the potato mixture, cooking for around eight minutes. Turn over carefully and cook for another eight minutes.
